I think if at a high enough gate, guy would just be straight up immune to genjutsu. Like tsukuuyomi still works by disrupting your chakra flow, but in the gate of death, I imagine guys chakra flow is messed up so bad already that it would be impossible for it to be manipulated more. Guy can beat itachi, but not in 7th gate. In 7th gate he's not able to speedblitz him before itachi uses izanagi. Then you also have the yaga mirror wich just cancels taijutsu but in 8th gate guy would prob just bend the space arround it and completly destroy him. We’ve never seen Itachi fight with full potential to be honest. But I’d like to point out that he isn’t as arrogant as Madara who took 8 gate’s attack head on. Even with holding back so much every fight involving Itachi went exactly the way he wanted. Also, his sussano’s shield and blade are troublesome, add on top of that the deadly combination of immobilizing genjutsu and Amaterasu. I like Guy but with his taijutsu alone and without any effective counter to Itachi’s ridiculous hacks, I don’t see Guy surviving all out fight with Itachi. He might take take him to the grave with eighth gate but that’s debatable too since Itachi’s battle iQ and analytical skills are off the charts. People often forget that shinobi fights are not a contest of who punches and kicks the hardest. For example, someone like hanzo can easily kill Guy not because of strength but because his abilities.
