18:21 ... Yes, we do appreciate you showing us how to make this. I plan to focus on learning some of these recipes. I haven't watched full video, bez I skipped to the end to see how it looks. But, now, I'll go back and watch the step-by-step process. Yes, again, thank you for showing us how you do this.
Hard to see ... 17:36 ... but I get the general idea of what it's supposed to look like. I wonder how it compares to store-bought stuff (like Boar's Head). Say texture and taste. But, I'll return, because I just got a message from Doc. Like I said on other video, I ate fast food and got pretty sick, so I plan to learn how to make this at home. Because Boar's Head deli meats got listeria and many people in America (recently) got sick. THey don't even know how many people were affected: the numbers were so big.
Also, thank you for showing us how to do this. I've got to start making lunch meat at home. It's TOO DAMNED EXPENSIVE for what you get, and a lot of Deli Meat got recalled recently from Boar's Head for Listeria which sicked a lot of people and killed a few. Also, on a side note, I ate at McDonald's in Houston, Texas, on 10-22-2024 (Tues @ 3pm) and got a QPC with "extra, extra onions". Well, come to find out, their onions from Taylor Farms were contaminated (I guess), because I have had some type of stomach issues and gastrointestinal pain. It's 11-08-2024 (Fri), and it's still not 100% gone. I think that I got (either) E. Coli or (maybe?) gardia from what I've read about. And, I'm sure it was McDonald's because my wife & I eat every single meal the same, except she didn't get onions that day -- because they forgot hers. Lucky her, right? [And, if you do ask, I have sought medical treatment. I got blood test and stool samples, but I am still waiting for the Doctors to review it.] Granted, I am feeling better (a little bit) every day, but I still have strange sounds in my stomach and intestine pain randomly throughout the day. Thus, I don't want to take a chance now with food safety. It's no joke. Thus, I am gonna learn how to make this stuff at home, save money, and not worry as much about being scared if I'm gonna get sick.

Have you thought about going straight to the ziploc bag? I use that technique for other pickles and it works great to keep them submerged without needing a ton of liquid, provided you push all the air out before sealing.
