Pesto from scratch 2 ways with my girl 🧒 🌿🍝 Did you know both ways?? I prefer mortar and pestle and you? Recipe 👇 Making pesto with a mortar and pestle can be a traditional and satisfying method. But if low on time or do not have a mortar and pestle you can use a blender. Here’s how to do it: Ingredients: - 2 cups fresh basil leaves, packed - 1/4 cup grated Parmigiano Reggiano cheese - 1/4 cup grated Pecorino Romano cheese - 1/2 cup extra virgin olive oil - 3 garlic cloves, minced - Salt and pepper to taste Instructions: 1. Start by crushing the garlic cloves with a pinch of salt in a mortar and pestle until you have a smooth paste. 2. Add the basil leaves gradually to the mortar and continue to crush and grind them with the garlic until they form a coarse paste. 3. Incorporate the grated Parmigiano Reggiano and Pecorino Romano cheeses into the mixture, continuing to grind until well combined. 4. Slowly drizzle in the olive oil while stirring and grinding the mixture until you achieve your desired consistency. You may need to adjust the amount of olive oil based on your preference. 5. Season with salt and pepper to taste, and continue to mix until everything is well incorporated. 6. I used 715 gr of 00 flour, 559gr of water, 130 gr levain (100%hydr). Total hydration 80%. and my dough was watery and sticky.

I'd say for like 5 minutes because the oven was HOT and he added sundried tomatoes + fresh mozz which needs very little cooking time. You just have to watch it at that point and adjust to your liking.
He said all that smell.. the beyond burger smells like dog food!
I just had the ravioli from Trader Joe’s had a very strong ammonia and chemical smell and taste
