That's not ham, it's spam or similar processed meat. Diced tomato will give too much water, and this will boil the filling, totally avoiding the chance of caramelization of the garlic and onion (expecially with the mozzarella coffin lid). Indeed, at the end of the video you could see the liquid escaping. This could be a good recipe, IF you cook in a pan garlic, onion and meat before all, just until the color show up. Avoid fresh tomato, use a spoon or two of sauce (for the flavor and the color). Also, if you give your pepper a quick passage in boiling water before filling you can singificantly cut the oven time, and avoid spot of raw pepper.
