the chocolate is not tempered you use chocolate at 45ºC

Hi chef, i have a questions why does my bonbon become sweating/ condensation after unmoulding the Bonbons eventhough i unmould it in 24c room temperature? Here in my country the weather is too humid 30c and above😭
I apologize for my ignorance, but I don’t understand: why did you dump out all of the chocolate near the end of the video? Also, what type of mold release did you use before applying color? Do you recommend any specific food dyes for making these beautiful bonbons? Did you just paint with food dye or with chocolate mixed with food dye? Your final product is stunningly beautiful. Absolutely gorgeous!!
by dumping the chocolate you create chocolate cups which you can fill up with ganache, nutmix,... if you don't dump it, you will get rocksolid chocolate bonbons which are nearly impossible to eat
Maybe tempered cocoa butter.
Poly carbonate molds, tempered chocolate, colored cocoa butter as paint & in the spray gun. Oil based dye ONLY. Water or gel based causes « curdling ».

Do I have to temper the chocolate before pouring into the dragee?
No need to temper, the chocolate must be about 40/45 degrees Celsius.

capol 236N , 254 for glazing . capol 425 for keeping the shine

Do we have to work in AC while working with colored cocoa butter as in India it is too humid. And other option
Your room temperature must be below 22 degrees Celsius. Otherwise it’s getting much harder to work with chocolate.
How to temper cocoabutter please
heat up the cacao butter till 40-45 degrees celsius and cool down to 27 degrees, heat back up to 30 and its perfectly tempered! make sure you keep stirring.

Hello, From my understanding, you use a food safe gold dust, you can just Google this. Then mix it in with a little bit of Vodka. After that it will be ready for painting.
