My channel is all about cooking with me. Doing things my way. Sometimes there are shortcuts, sometimes not. It about having fun in the kitchen.
I want to teach you just how easy it is to create amazing food in your own kitchens, no matter how big or small that space might be.
To be able to cook with simple, but good ingredients is key.
A good sharp knife always being very important to the start of anything great.
Dishes can be created from the simplest ingredients. Always trying to use fresh, seasonal produce.

Strawberry Curd
Strawberry decadence is how I would describe this.
I enjoy texture so I don't strain the pulp, but if you want it super smooth, push it through a sieve.
Its easy to make and although the cornstarch is not traditional, it does help erase the few issues of curdling and scrambling.
With strawberries in full season now, go ahead and give it a try please.
500gr fresh strawberries, pureed.
4 eggs
100gr sugar
5ml cornstarch
125gr butter
Whisk the eggs, cornstarch and sugar together.
Heat the strawberry puree and when just below boiling point, remove a few tablespoons and add to the egg mixture.
I haven't done this in the video, but it is the correct way to do things, I am just impatient.

Can I use limes instead of lemons, parsley instead of coriander, and spring onion instead of onions?
Definitely can use limes instead of lemons and spring onion instead of onion. Coriander is a herb widely used in South American cuisine and adds a totally different dimension to parsley so I would not substitute it. Hope that answers your question.
