My grandmother comes from Småland in Sweden and used to make these the traditional Smålandese way.. What a great version of kroppkakor you got!! I like the idea of sausage meat.. Instead of cured pork. And the flattened disc shape makes better sense if you are going to eat them fried.. Here they are round like balls and most people will eat them when they are boiled and only fry the leftovers the next day.. The reason why you need to wait for the potato before you make the dough.. Is not only for the temperature to come down (you don't want to burn your hands). The main reason is it needs to stop steaming... Or the dough will get really really stodgy and slightly unpleasant.. Because you will need to add more wheat flour to compensate for the added moisture in the dough... But it is super important that the dough doesn't get too cold.. Because that is why it won't seal. You say sometimes it works and sometimes it doesn't. I'll venture out on a limb and tell you, that the dough got too cold, which makes the fat present in the egg yolks get sucked into the starch and the dough becomes more brittle... You have to work fast when making the kroppkakor.. But lovely to see nonetheless.. Keep the olde swedish traditions alive!

Greetings from Sweden. The original recepie is many hundred years old, it has cured porkbelly and union as filling instead of sausage and the shape should be round not flat, it is served with clarified butter and sugarstired lingonberries.
