    Does the handle on the pan get hot? I’ve had a fancy pan that had a solid handle mounted like that as oppose to the fork style mount and the heat used to transfer to the handle to the point where I couldn’t grab it bare handed. How does this perform in that regard?

      The handle is cast stainless so it's got relatively low thermal conductivity, but ultimately it depends on how you're heating it. I haven't had that problem, personally, but if your burner is too big for your pan or you're heating it for a very long time or something it's just going to happen. (I'd love a heat spreader like you're describing as well, though.)

    Thanks for the comments on the tortillas de maize - ran into an identical problem trying to make the Salbutes in the Yucatan chapter, right after the cochinita pibil (so far under the amount of water needed). Doing some research it looks like on some of Rick's videos he's starting with fresh masa (not the dried you can commonly get at the grocery store) and that's causing the big difference in the amount of water needed. Resting right now, we'll see how they come out!

    Is titanium toxic at high temperatures, Kind of like the nickel in stainless steel is?

      Nickel isn't toxic at high temps necessarily. It requires leaching in large amounts to become toxic and that requires high acidity over a very long time to be impactful.Titanium is more stable up to way higher temps than used for cooking in its raw form and is far more stable and thus not a concern (afaict) in this titanium nitride form.

    I've bought several pieces from My Place for my wife, including two of the regular Always Pans because I managed to "break" the first one. I haven't touched the second one in case I break that too. Now I can see it's not just me. Thanks. And I won't waste my money on any more of them, including this titanium one.

    Great high speed overview! I think you make some excellent observations about the knives: Global G2 being a great beginners knife (I started out using one of these). Shun being pretty but chippy, and Miyabi being well made but too expensive - yes! Also in my experience, generally handle heavy balance which is not ideal. Finally I think the comment about the Wusthof Ikon is probably fair, but they have altered the heat treatment and sharpening angle to make the knife perform better - in fact so have most German manufacturers, I have a Messermeister Oliva that is essentially a Wusthof with more pleasant handle appearance and ergonomics that is actually very nice to use.

    I have a 15cm kasane petty knife (blue paper steel) made by Katsushige Anryhu san and love how light weight and sharp it is- but it does take quite some time of care and maintainance. I want to replace my miyabi santoku as my chef knife. Could you please recommend me a lightweight chef knife stainless steel for under 400$ for professional use?

    love my 12.5 nanobond skillet, but id say a 9 for design on it because truthfully a helper handle or larger main handle wouldve been nice on the large skillet. Putting the skillet in the oven is when this comes into my mind the most.
