I've found lots of success using a foil boat thats open, and placing a butcher wrapped brisket within the foil boat. That way there is a wrap to finish the brisket to temp, while holding the excess juice within the foil boat to be absored when resting.

How did you determine 90? I just fucked up a filet, I took it off at 120 and then seared it to 130. Obviously need to take it off sooner but like how did you determine 90?
@@jaegarbombs7297 90 is honestly low for most steaks. Bet the filet isn’t the same size as a porterhouse so I determined 90 by doing what you did…fuck one up. Just decided to shoot a little lower. I have a bad habit of searing too long
@newenglandfirecookin2885 same. So if you were to leave the probe in is that thing getting to 120-130 in the pan or while resting? Or is it honestly more like 115 when you slice it lol

What type of bread are you using to make the chalupa shell?

Butter under skin , olive oil top , salt pepper , garlic powder onion powder thyme on skin then sprinkle tiny tiny bit of sage powder on top that’s it , you have cranberry sauce gravy etc , you don’t want to make it so the left overs taste so strong that you can’t make a soup or stew or sandwich with left over

Several suggestions Try to relieve all or majority of the air from the bag helps keep all the wings submerged. I’d probably do a 50/50 mix of flour and corn starch with about a teaspoon of baking powder. During your last crisping process I’d brush them with that last sauce mixed with a bit of no salt butter. But otherwise looks good and great job

😊Really enjoyed your video. I'm enjoying watching Vortex video cooks. My buddy does all the Vortex chicken cooks. So far it's only been Chicken thigh quarters. My hands shake bad. I haven't attempted Chicken wings with the Vortex, afraid they will be dry, but nobody seems to have a problem. You did a great cook and I can't wait to give it try😅. Look delicious..!!! however...!!!! dude..!!! with the amount of sodium in each pack (you have over 20,000 mg from what you added) anyone with heart issues or chronic high blood pressure could actually drop dead from that amount of sodium. Three are salt free alternatives without killing yourself or your family, just say'n...!!!!
Thanks for watching!!! For starters I believe I used 4-5 packages of Taco Bell Original seasoning which at 300 mg sodium per pack yields a total of 1200-1500 mg of sodium for the entire cook. Not 20,000. I expect that every individual watching this takes accountability for their own health conditions, fitness level and dietary choices. I have high BP. And when I made these it was for a crowd. Definitely not something that would be a staple of a daily or even weekly diet for sure. This is a treat and any reasonably minded person would treat this as such
