Tillage is a dirty word in agriculture, especially in organics. We do what we can to preserve and improve our soils, but tillage can often have a negative impact. Garlic is a fun and unique crop to grow. Unlike most annual vegetables, it is planted in the fall and harvested in the early summer. A tasty byproduct of a hardneck garlic crop are the garlic scapes - the flowering stalks of the garlic plant.
