As a chef the only 2 points where i could se improvements are the jullienne (my boss would scold me if they where that thick) and the knife motion. try to slice more rather than push, it saves your fingers and your knife in the long run. otherwise great video!

1:00 it's best to avoid scraping with the knife like this, as it's not the kindest to the edge (or so I've heard, at least) Also at 5:20, personally, when I want to dice onions I completely forego these crosscuts. I know they're traditional but in my experience the onion will separate along the layers and get me a pretty similarly-sized and similarly consistent dice without them, and it totally removes the necessity of cutting towards my hand. Great video though!

I like my onions as small as possible so I use that method for dicing and then still spend a minute rocking the knife on the blade in the onion pile making them even smaller. Especially for sauces like bolognese I just dislike to bite on a larger onion piece there
as a not pro, you're fingers and knuckles on your none knife hand are wrong, if you went fast you'd cut yourself. Blade should go against the knucks to protect the finger tips. Pretty basic stuff.

For your diced onion at the end, swap the first two steps, it's easier that way.

Now when i was in jail, we would take a bag of chilli cheese fritos, a pack of chicken ramen, and a bag of sour cream and onion potato chips for a meal. We would cruch the chips and crush the fritos and combine them in the fritos bag, make the noodles the normal way, drain all water, season them, add them to the bag of pulverized dust and mash them around real good, pack it all to the bottom and let them sit for 10 minutes. Tear the bag away, Voila, jail burrito. Thats sort of what it remided me of.

Stagg chili is pretty decent, a little more than the baseline chili but I like the extra flavor and peppers going on in it. You should try it out on a dog sometime. Better than Hormel imo.

if you dont want your hotdog buns to get soggy might wanna put a bit of butter in a skillet and then put them in there and let them get toasted like a half of a grilled cheese. Also you might want to experiment with the type of cheese you use. Not that im healthy but both of those cheeses are super mild and you probably cant taste them much compared to the number of calories. A extra sharp cheddar will let you taste the cheddar better and you could use less. As far as cream cheese i dunno.
Oh hey man if you like chili dogs. You might like coney dogs. Or what my family calls coney dogs. What you do is get castleburies hotdog sauce. Its fairly thin but its mostly i think beans im not entirely sure. But its amazing. And your hot dog and the bun and i used extra sharp cheddar cheese. They are absolutely amazing. They are probably my favorite kinda hot dog. I microwave the catleburys in a bowl i nthe microwave with the hotdogs cause im lazy. But my parents used to boil them and put the castle bury can in the middle of the pan. And it would heat up the can of hotdog sauce.

They will not tell you the angle or the warranty - terrible communication - If you want a throw away knife cause they wont communicate with you - bought 4 - a set and boing were gifts and one for myself - sorry I got it now - no backing
I put the same angle onto it as all my knives and it works great, I don’t think a $25 knife is something you can really expect a warranty with.

After watching a video about grilled cheese with all the cheeses available on epicurious, i decided as an italian to tackle it. I'm 100% hooked on the taleggio grilled cheese, and the key for their recipe was to use mayonnaise on the exterior and the interior was buttered. Althought i considered the cooked mayo a sin, i found out i quite like the tang it adds to the flavor. Magnificent cheese pull and flavor, thought the recipe is very simple it's a great snack to prepare in 5 minutes, also let you experiment with all the cheeses you want👌🏻
