Sugar absorbs into the marshmallows and makes them sticky. The cornstarch keeps them dry. Once you have cut them then you can brush off the excess cornstarch and instead top them with powdered sugar

You can make your own sour cream at home if you don’t have any at present by mixing 1 cup heavy cream with 2 tablespoons lemon juice, give it a quick mix and set it aside for a couple hours. If you are looking for a substitute for dietary reasons then I would recommend using dairy free sour cream made the same way with dairy free cream. Thank you for the question. I’ve never used this recipe to fill and bake, but I believe it would be ok…. It may thicken in the oven, which is my only concern. So it might turn out like a baked custard. It’s better to bake the donuts first then fill them, that way the pastry cream is creamy… I hope this helps. 😀 Please subscribe for more delicious recipes. Unfortunately because this is a slow rise recipe, you won’t get the same kind of crumb if you don’t allow it to rise in the fridge for 24-36 hours. I add about a quarter cup of honey when I make this and it comes out awesome I've also added grated cheese (Parmesan is nice, gruyere is awesome) Herbs And I've added cinnamon, cardamom, nutmeg (did not have raisins but I'm sure that would have been great) Super hard to mess it up!
