It should be soft and mushy. - Mash the dal with the back of a spoon or a whisk to get a smooth consistency. #### Preparing the Rice: 1. **Rinse the Rice:** - Rinse the rice in water until the water runs clear to remove excess starch. 2. **Cook the Rice:** - In a pot, bring 2 cups of water to a boil and add the rinsed rice and salt. - Reduce the heat to low, cover the pot, and let the rice simmer for about 18-20 minutes or until all the water is absorbed and the rice is fluffy. #### Tempering the Dal: 1. **Prepare the Tadka (Tempering):** - Heat ghee or oil in a small pan. - Add cumin seeds, mustard seeds, dry red chilies, and asafoetida. Let them sizzle. - Add the chopped onions and sauté until they turn translucent. - Add the ginger-garlic paste and green chilies, and sauté for a minute until the raw smell goes away. - Add the chopped tomatoes, red chili powder, and sauté until the tomatoes are mushy and oil starts to separate from the mixture. - Pour this tempering over the cooked dal and mix well. - Add garam masala or dal spice mix and give it a good stir. - Garnish with fresh coriander leaves. #### Serving: - Serve the hot dal over steamed rice, garnished with more fresh coriander leaves.
