Homemade Mole: Elevate Store Bought Mole Paste With These Tips
Simple Mole Recipe
Ingredients:
1 Bottle of Mole Maria
4 Cups of Water / Chicken Broth
Salt if needed
Directions: Mix the paste on a hot pan with the chicken broth until fully dissolved.
Custom Mole Recipe:
½ White Onion
3-4 Garlic Cloves
2 Guajillo Chiles
4 Ancho Chiles
2 Roma Tomatoes
2 Inch Cinnamon Stick
½ Tbsp. Oregano
10 Whole Peppercorns
2 Whole Cloves
4 Whole Allspice
Handful of Animal Crackers
Handful of Peanuts
Simple Mole Sauce
100 gr. Mexican Chocolate
Directions:
Fry the onions and garlic until brown.
Add clean chiles and tomatoes and continue cooking until the tomatoes change color.
Once done, add it to a blender together with your spices, crackers, peanuts.

    Mole, from the word “Mulli” meaning grounded/milled, originated in pre-Hispanic cultures where indigenous people mixed various chiles with pumpkin seeds, hoja santa, and tomatoes, typically served with turkey, duck, or armadillo meat during ceremonies as offerings to the gods. With the arrival of the Spanish, new ingredients like black pepper, anise, and cinnamon were added, along with chicken, beef, and pork, enriching the original recipe. The culinary fusion during the Colonial period resulted in a wide variety of moles. Today, mole remains a central dish in Mexican celebrations and is a cultural symbol recognized internationally.

    What reasonable sensible person wouldn't wash rice. rice goes everywhere. All due respect things crawl on rice that shouldn't be

      Washing rice is usually done to remove starch, not to santize the rice as washing with water wouldn't do too much to microbes. Also, yum extra protein :)

    If you want to go full traditional: For aguachiles verdes use green chiltepin, and for aguachiles rojos use red chiltepin. This is the type of chile that you find in Sinaloa mountainous region. For Red Sauce the best option would be using Salsa de la Viuda, a staple in Mexican Seafood recipes.     Did you know that the Asado Rojo has its origins in Zacatecas? During the Mexican Revolution, Pancho Villa arrived with his troops at the Ejido de Morelos, in Zacatecas, and requested that a dish be prepared for him with pork and chiles to celebrate. Since then, this dish has been used as a symbol of celebrations in parties; specially weddings.

    Start with good tequila.....ex - Siete Leguas, San Matias, Lalo, Cimmaron, Suerte, Tequila Ocho, Terralta, G4, Volans, Volcan, Tapatio, Yeyo, Olmeca Altos(budget) , Pueblo Viejo (budget), Santo (good celeb tequila) etc. Lifes to short to drink s%&t tequila .

    Some additional comments for this video: For the first spirits (agave based spirits) I want to make a note: Technically all of the spirits fall under the category of Mezcal, as Mezcal is an umbrella term that refers to the distillate of agave. But just like food, many spirits in Mexico have Denomination of Origin, which makes all of the liquors in the first part a “special” kind of Mezcal, and that’s why they have their own name. If you travel to Mexico, you might find some of these as “Raicilla Mezcal” or “Tuxca Mezcal”, but rest assured that you are still getting the real thing! Tuxca is made out of 10 different Agaves including: A. lineño, A. ixtero amarillo, A. cimarrón, A. listero, A. cenizo, A. salmiana and others

      This depends on your preference. I like silver, so I use it both for drinking and cocktails. But if you like smokey/wood flavors in your liquor, you can go for reposados or añejos. (I don't recommend añejos for cocktails as it is very strong in flavor)
