CƠM GÀ HẢI NAM
HAI NAM CHICKEN with GINGER SCALLION SAUCE
Recipe:
•1 whole free range chicken
•1 tablespoon salt
•1/4 teaspoon turmeric
•couple slices of ginger (optional)
1•Clean chicken by giving it a good rub with salt then rinse. (Yes, I clean my chicken)
2•Bring water to a full boil. Enough water to submerged the chicken.
3•Add salt, turmeric powder, ginger and chicken.
4•Cover and bring back to a boil. Uncovers and scoop out all the scums.
5•Cover and let simmer for 20-25 minutes on medium low. Depending on how big the chicken are. My is about 2.5 lbs (20 minutes).
6•Removes chicken and let cool completely. You can also put chicken in ice cold water for crunchier skin.
