Hi, I have 30awg wire and wondered if that would be suitable for this project?
It's hard to say, I've never tried it with 30awg. I usually just cut up an existing rca wire but you can make one without any wire at all by soldering the rca port directly to the potentiometer

On the pre-laminated ones, no. Attempting to remove the glass would likely damage the screen
