When should a player use toes in versus heels out? I have always coached that players should use toes in because it doesn't slow down the transition as much.
That's subject to a ton of debate. In my opinion, the tighter the pivot, the more likely a "heels first" makes the most sense. Also, when playing a tight gap, the "heels first" gives the best chance to keep shoulders and stick facing the attacker and challenging for the puck. Toes first is good when doing longer turns or looser gap because it lets you keep your speed slightly better, but turning your back on the play in a tight gap WILL result in getting burned by any decent attacker, and I'm not a fan of trying to switch toes to heels halfway through a turn because you have to get off the edge and there is a risk of falling or losing position.

Great drill, I like the execution from the 2nd player as he (for the most part) keeps the puck out of the stick zone of the other player.
