The House That Gesha Built - Black & White Coffee Roasters
For founders Lem Butler and Kyle Ramage, Gesha coffee has played an integral role, both in their relationships with coffee and their professional endeavors in the industry. Both Lem and Kyle showcased Gesha coffees on the World Barista stage, and the variety became a pillar upon which they built the Black & White brand.
When we opened our doors seven years ago, excellence was at the forefront of our vision for the company, and it remains one of our three core values today. To celebrate our birthday this year, we want to pay homage to a variety that is steeped in excellence and also close to our hearts: this is the house that Gesha built.

    This is the video I have been looking for!!! I have an EK43s and it’s stellar! I use it for everything, espresso, pour over. I have heard the Bentwood makes a really sweet cup. Wondering if adding one to the bar would make a huge difference in flavor or not. This video is really helpful! Thanks! Is the contrast enough that a non coffee enthusiast would be able to tell?

    I wonder why sharp acidity is so huge in the espresso zeitgeist now. "Lemon" and "red cherry" used to be considered roast defects, now its desired.

    It’s also good to remove variables such as water, by using a consistent and repeatable water recipe. One less thing you have to worry about when dialing in a new bag.

    It is better suited for drip coffee. It's easy to use and to buy. EK43 has higher attraction, and is better for Espresso coffees the 54-gearing is made of mostly plastic parts has lower attraction compared to the EK the 54 is not made to last? hugs wheelchair larry

    Do you let the grinds saturate a little before you start your timer? Or is 20-22 seconds from the moment you start your machine? I'm using a flair 58 so can control the pressure. I usually let the grinds saturate ~10 seconds until it starts to drop into cup then bring it to 9 bars, but have never tried with anaerobic coffee before... Thanks!

    Interesting, but they have to find a manufacturer who can produce it in volume to the extent that they can cut the price at least in half. If this were $160 instead of $360, I might be sucked into ordering one.

    Currently I drink only espresso (using a cafelat robot) and enjoy lighter roasted coffees (such as yours) and especially African beans, naturally processed, anerobic, etc. So, I would enjoy using the bird if I could still do short, intense cups, like a 5-1 or 9-1 ratio of water to coffee. Can you explain more about how you’ve used this machine with finely ground coffee? Also, what’s the brew time, in terms of how long you have coffee in the chamber?

      The BIRD facilitates the utilization of a finer coffee grinder setting, enabling the extraction of volatile compounds that might otherwise be retained in coarser grinds. Picture the heightened brilliance of a coffee variety (bourbon, Gesha etc)fruity nuances of a coffee due to a specific coffee region or farm terroir and floral aromas achieved when extracting natural processed Ethiopian coffees as espresso (pressurized brewing); a similar intensity in flavors can be achieved with the vacuum brewing of the BIRD (without the viscosity of espresso) compared to the same coffee in a French press.
