Modern Ferraris sound awful with a stock exhaust unfortunately, especially the V8 twin turbos like the F8. You need an aftermarket straight piped exhaust installed to sound good.

why would it stall?

It used Auto Stop Start. He also forgot to deactivate it so the car won‘t let him do Launch Control after restarting the car. This is common problem if you just drive the car and don‘t know anything about it.
