I like to leave my sauerkraut on a counter (room temperature) in my kitchen for 2-4 weeks, or until it reaches the flavor I like best. If any mold forms, just remove it. It's not harmful, but it can skeeve some folks out lol. Store for months in a lidded jar in a cold root cellar or fridge. This is a delicious, easy way to get your #fermented vegetables!!
Beautiful harvest, I’ve got some Brussels sprouts which are perking up after rain and cooler temps.

Hahahah!! Yes, and you're right, but elderberries are a tenacious member of the berry family. Some just won't let go, and I have copius amounts still out in the patch lol!! Also the sprung twigs take up more room than they did loaded. Thanks, it's so tasty too! I feel extremely blessed!!❤❤❤❤❤ BTW, our daughter has been homeschooling our grandkids; I told her about your school room when she was designing hers! ❤

Making your own vinegar is #easy and #fun !!! If you want the full video, search "make your own acv" on my video list. Simply gather the peels, cores, or whole fruit of any you wish. I make apple cider vinegar because I have wild apple trees growing on my property. But you could use any kind of fruit you like. Experiment and have fun! Here's the method: In a clean glass jar, load your fruit, then add clean, non-chlorinated water. Strain the water and fruit back out of the jar and measure how many cups of water you're using. Add one tablespoon of sugar per cup of water, stir to dissolve, and load back into the jar. Cover with a cloth or coffee filter so air can pass, but bugs or rodents can't. Let sit in a cool dark place for at least 8 weeks. This vinegar has been fermenting for several months. Strain and store as you would any other vinegar. **PLEASE NOTE** This kind of vinegar is wonderful for good health, making dressings or mayonnaise, or cooking with. If you're canning or preserving for safe shelf storage, you need commercial WHITE VINEGAR that is distilled to 5% acidity. THATS IMPORTANT.
A new learning curve for me, I just made fermented Hungarian sun pickles, they were very good. Skill sets are important.

I really appreciate your reviews on this machine. I’ve been considering getting one, but at such a low price I wasn’t sure if it was just too good to be true. I also have a Vevor cream separator for our goat milk and it works like a charm. I make sourdough bread by hand in 15 pound batches, and I make bagels that are wrecking my poor 15-year-old kitchenaid. Do you think this machine could handle that large of a load?
Honestly, I don't know. But I'm still using it and it'd never given me a minutes worth of a problem. Hope that helps 😊

Hey, I've only been growing it for 4 years- all from a bunch of 5 I got at my co-op. It's so easy- at least here it is. Plant in the fall like you would any other bulb, and away you go! You have a good weekend too!!
@@oldtavernfarm lol awesome ! I'll try again. I've tried planting it in the fall an had nothing come up. Then in spring an had a ok success.. But this year I had 3 garlic volunteer pop up that I must of missed from spring so I'm gonna try to grow our garlic from them because there tough! They over wintered an all without me doing anything to em. So hopefully I can use them as my seed!

As we move into our 10th full year as homesteaders, raising, growing and making our own food (and other things), I am increasingly enjoying meals that are nearly 100% homegrown. We are now fully meat independent, moving quickly towards fruit and veg self-sufficiency, and I make all our bread and baked goods from a regional flour supplier. As I learn more about fermented foods, such as these fermented garlic dill pickles, we are also boosting our nutrition, immunity, and overall health. We grow our own herbs, from which I make pestos, teas, herbal remedies, and dry for yearly use. The biggest area where we are weak is dairy and healthy fats. This morning's beef sausage and pickle sandwich is laid on seed oil-free homemade mayonnaise, which is slathered on homemade sourdough bread. It can be done. You CAN be independent of "the system". You can skip the grocery store's absurd prices, and still have abundance. (and HEALTH) I have loads of videos on how to grow your own life and step out of the river of consumption. @OldTavernFarm I saw you had a review of your 15Qt Mixer, and I've been eyeing a 10Qt but I have a question if you could answer? what would be a minimum batch in a big mixer like a 10Qt.. I usually make double batches of cookies and nothing super crazy.. but I also don't want a wimpy over priced kitchenaid.. :D
I'm not really qualified to say, but I do batches of 11 dozen cookies at a time every week in my 15 qt. I am qualified, however, to agree I'll never buy another wimpy, overpriced kitchen aid again!

Traditional Basil pesto includes pine nuts and pecorino romano cheese. I try always to use what I have, and what I had was parmesan (which I forgot to say), and salted almonds (without seed oil). I found online, a popular brand of prepared basil pesto, which weighed 1.38 lbs, and cost 23.71!!! AND the ingredients included SEED OIL!!! (Sunflower oil). Even if you have to source your basil from a local grower, it's always better to make your own; it's MUCH less expensive, you get to control the flavor profile, and you get to avoid toxic ultraprocessed ingredients!
Recipe: 13 oz white granulated sugar (about 2 cups) 6 oz egg yolks (about 10) 7 oz Lemon juice 1/2 oz lemon zest (about 4 lemons) 5 oz butter (1 stick and about a tablespoon)
Had to return ours, left door had issues and the thermometers showed it was always 48-49 with everything closed correctly also the ice maker stopped working. Nice design but terrible model
