Recipe 🫶🏼 Ingredients: @Drink Poppi for the good vibes 2 chicken breasts 2 sweet potatoes, cubed 3 tbsp @FAGE Greek yogurt Zest of 1 lime Juice of 1 lime 2-3 green onion, diced (save some for topping!!) Drizzle of @Mike’s Hot Honey 1-2 tbsp @Hidden Valley Ranch ranch dips seasoning Shake of blue cheese @Josie’s Organics coleslaw @Primal Kitchen Foods Buffalo sauce (make sure to save some for topping!!) Seasonings: @Simply Organic smoked paprika, onion powder, salt, pepper, @Graza olive oil Instructions: 1. Season sweet potatoes with above seasonings and olive oil, and bake at 450°until crispy 2. Season chicken with above seasonings and bake at 450° until internal temp reaches 165°. Once fully cooked, use hand mixer to shred chicken, then mix in 3/4 bottle of buffalo sauce 3. In a bowl, combine yogurt, lime zest and juice, honey, ranch seasoning, and green onion and mix well. Then, add in coleslaw and blue cheese and mix u til well combined 4. Recipe 🫶🏼 Ingredients: @Drink Poppi for the good vibes 1 lb ground chicken 6 tsp ground ginger 3 green onion, diced Zest of 1 lime 1/4 cup chopping cilantro 1 red bell pepper (1/3 diced, 2/3 sliced) 1/2 yellow onion, sliced 6 tbsp coconut aminos 2 tbsp red curry paste 1 can coconut milk 1/2 lime juice (more for topping) 2 garlic cloves, minced Broccoli florets @lundbergfarms jasmine rice Seasonings: @Simply Organic red pepper flakes, garlic powder, onion powder, salt, pepper, @Graza olive oil Instructions: 1. In a bowl, combine ground chicken, lime zest, diced bell pepper, 2 tbsp coconut aminos, cilantro, green onion, 2 tsp ground ginger, and seasonings 2. Use cookie scoop to form into meatballs (this recipe makes about 20 meatballs) 3. Brown meatballs on both sides, then remove from pan 4. In same pan, add in onion, sliced bell pepper, and garlic and cook until onion is translucent 5. Clear space in pan, then add in curry paste and rest of ground ginger and let sauté until fragrant 6. Add in coconut milk, coconut aminos, lime juice and red pepper flakes and stir until well combined 7. Add in meatballs and let simmer until meatballs are fully cooked 8. Um, I’m not a dietician but I think Parmesan has more protein than cottage cheese. Also only Americans add cream in the Alfredo. It’s supposed to be a tablespoon of butter, Parmesan cheese (lots) and some pasta water for the starches to help thicken it up. The hot pasta and water help make the cheese melt and creamy so you don’t need to add any actual cream. It’s so easy to do and so delicious. Also since there are so few ingredients it’s a bit healthier than regular American Alfredo. Especially the store bought varieties. The key is fresh grated Parmesan Romano and grate it as finely as you can. Simplicity can taste so good.
