Actually the grease bakes into the pan and becomes a sticky mess. There doesn't need to be that much water.

If you want to use water in the empty spaces to keep things moist you could use ice

maybe just done jiggle it so much? i’ve done both methods & if you’re using only part of a full pan the water method always allows baked goods to STAY moist.
Ive never heard that you HAD to fill those holes 😂 it's almost like saying, you don't have to order the whole menu....you can just order the food you want. Thought this was an obvious, known thing ...😅 Sincerely confused without sound
Pretty sure if you do that youre going to STEAM you muffins 😂 MUFFINS DO NOT REQUIRE STEAM this was actually a common argument in a bakeshop i worked in bc one of the bakers would start baking her muffins with coffee cakes and croissants and bc of that the muffins would get steam bc the others require it but thing it it MELTS anything you have on your muffin. If you like that COOL but most people like the CUNCHY tops HELLO 😂 they'd get either studel topped or coarse sugar and they would get hard as a rock on the tops once the were fully room temp 😂 and mind you the muffins took more than twice as long to bake than those other items so shed have to transfer HOT pans to finish them 🫣 but still she had to do it her way 😂DONT STEAM YOUR MUFFINS 😂😂 THIS ADVICE IS NOT FOR ALL BAKED GOODS, STEAM YOUR BREAD AND MOST PASTERIES 😂 and all this made me realize the main main reason we'd all argue was we also had chocolate chip topped muffins and those 🫣 they'd look AWFUL when steamed and the customer complaints always certain 😂

I mean tbf I have Parkinson’s with full tremor and the water thing was never full enough to slosh so while I don’t know if it has a benefit (I do it because my gram told me to when I was 3) I don’t know if that’s necessarily speculation either so I’m not sure😅 (It sounds like while cook’s illustrated did test the even heating theory and found it was actually just a hypothesis, the tip may have originated as a way to stop cheap pans from warping)

That's such a bad reason to advice against that. You can just say you don't need to do it if the recipe doesn't call for it.

Where I live in canada, it is so dry that it's actually needed to add that water! This may also be the case if someone is baking in a higher altitude, or in a desert! But you are totally right that the water could mess up your desserts, if someone needs to add that water, it is a far better idea to fill a baking sheet with a small layer of water, and put the sheet in the oven with what ever you are baking!
I'm from Northern Ontario and I agree. I do the same thing. Water everytime.
If the recipe needs steam and your worries about water spilling over use ice instead, the heat in the oven should melt it quickly enough without premature spill!

You only put a little bit in not to the brim. If you're seriously that clumsy just put it on the rack first and then fill the slots. Wtf
