Welcome to Yummie’s Country Cooking. My name is Cathy and I love cooking. I’ve been cooking since I was 13 years old for 53 years. I would love to share some my recipes with you. They’re very simple recipes. Thank you for subscribing to Yummie’s Country Cooking.
Enchilada Casserole
3 chicken breasts (boneless)
1-2 red/orange peppers or green
1 large red onion
2 cans Mexican corn
2 bags of roasted chicken rice
1 bag of 4 Mexican cheese = 2 cups
1 cup of Colby cheese or your choice
1 packet of enchilada sauce in packet
1 1/2 cup of water
Salt free seasoning
Tortilla flour X-large
Chunky Sala (mild or hot)
2 - 10ounce Enchilada sauce in can
Creole seasoning ( your taste)

1 cabbage 1 small onion 1 bell pepper Salt free seasoning Garlic powder Crushed pepper Black pepper 2 tablespoons bacon grease 1 tablespoons sugar Creole seasoning 4 spring onions Cooking time up to you if you like crunchy cabbages cook 10 minutes. If you like your cabbages softer cook 20 minutes until water evaporates and it starts frying. Enjoy

Chicken Breast 1 pound Sausage 1 pound red or gold white potatoes Bell peppers 1 onion 1 pound string beans Small bag carrots 1 Lemon Chives Oregano 1 tsp chopped garlic Salt & Pepper Dash seasoning Smoked paprika Basil Italian dressing(zesty) Parsley Squeeze 1/2 lemon over chicken breast set aside while cutting up veggies. 3 cups sweet potatoes 1 cup white sugar 1/2 tsp salt 1/3 stick melted butter 2 eggs 1/4 cup milk (evaporated) 1 tsp vanilla favor Mix all ingredients together put in a grease baking dish. Add topping Topping 1 cup light brown sugar 1/3 cup flour 1 cup chopped nuts 1/3 cup of melted butter Cook 24-30 minutes . Oven 350 degrees Enjoy!

Chicken Roaster 1 lemon 1/2 stick butter 1 tsp garlic powder 1/4 celery salt salt Free Seasoning much as you want Smoked Paprika Much ss you want 2 tsp Creole seasoning Roasted garlic 1 onion 2 stalks celery 2 stalks green onions 1 orange Refrigerated for 2-3 hours Bake 350 degrees cook 3 to 3 1/2 hours depend on the size. My parents are from Jackson North Carolina. Other than me and my mom making it, nobody else can do it right. But last weekend we went to a soul food in maplewood, New Jersey and the chopped BBQ was awesome. Come to find out the owners are from Scotland Neck, NC😂 But there’s a place in Roanoke Rapids, NC calling Ralph’s BBQ and it’s the best BBQ I’ve ever had!

My parents were crom Kinston and New Bern, NC and they always had it with crispy pork skin ( cracklins ) mixed in ! That's what made me still remember it after 60 years !

It’s been a very, very long time since I had that type of barbecue when I tried to tell my buddies about it there is just no way to explain it is hands-down. The best barbecue I’ve ever had in my life. I live in Albuquerque and we used to go to North Carolina And we always stopped at one of the little restaurants to get a pulled pork barbecue sandwich. The sandwich alone was worth the trip. Thank you for making this video. Much appreciated.!!

Hi! I lived in Elizabeth City for 15 years. Loved it.
I've been making this for decades. My Great GMom (from Rocky Mount, NC) showed my Mother who ended up teaching it to me. They included the pig skin to add to the tecture and flavor. I modified it some when I got my hands on Sriracha sauce blending it with the hot sauce. The spicier, the better, over here. 🙂

My family was from a place called gates NC. We ate corn bread like that no egg, no sugar, just water and mill.
My grandma would make it with no eggs or sugar too. It’s good too.

Can you sub brown sugar and apple cider vinegar instead. I have always loved the Carolina pulled pork better than BBQ drenched in red BBQ sauce. And the cold slaw with a little hot sauce to top it off is OMG yummy. With leftovers I make pork carnitas making myself hungry now. Thanks for sharing😊 ❤❤😊
Yes! Apple cider vinegar is awesome. Never tried it with brown sugar. I do have friends that use brown sugar. Thanks for watching my channel! Don’t forget the fried cornbread with slaw. 😂
I’m from, Fayetteville left in 77, Newport News now83, retired chef, White sugar, white vinegar, don’t go in our bbq, not original.
In growing up we use white or cider vinegar with white sugar and crushed pepper to make our barbecue. It’s really good. I’m from Windsor NC.
