Apple Fritters Recipe: -Dough: 1 1/2 cups all purpose flour 3 Tbsp sugar 2 1/2 tsp baking powder 1 tsp salt 1/2 tsp ground cinnamon 3/4 cup milk 2 eggs 2 tsp vanilla extract 2 large apples ( peeled, cored and diced) -Glaze: 1 cup powdered sugar 3 Tbsp milk 1/4 tsp vanilla extract -Directions: Mix all wet ingredients along with apples. Then fold in all dry ingredients. Drop batter by large spoonfuls. Fry about 2 minutes on each side. When they cool slightly, dip in glaze and serve.

Carrot Cake (Makes 1- 9 inch cake) •1 cup all purpose flour •1 tsp baking powder •1 tsp baking soda •1/2 tsp salt •1/2 Tbsp cinnamon •1/2 tsp grated ginger •1/4 tsp ground cloves •1/4 tsp ground cardamom •1/2 cup brown sugar •1/2 cup olive oil •2 eggs, room temperature •1 tsp vanilla •1 1/2 cups grated carrots •1/2 cup chopped walnuts or pecans ◇ Mix all wet ingredients first, then fold in all dry ingredients. Bake at 340°F about 30 minutes, or until toothpick inserted in middle comes put clean. Spread vanilla or cream cheese frosting on top once cooled.

Recipe: -1 medium onion, thinly sliced - 4 medium potatoes, cubed - 1/2 cup fenugreek leaves - 1/2 tsp red chili powder - 1 tsp cumin powder - 1/2 tsp black pepper powder - 1/2 tsp paprika powder * Directions: - Heat oil and fry onions til golden brown. Add fenugreek leaves and cook about 5 minutes. Add potatoes along with all spices and salt to taste. Cover and cook til potatoes are very soft. Towards the end, green chilies can be added. Garnish with chopped cilantro and serve with roti/paratha/pita bread.
