What would I do with the other half of the milk?
Thank you very much for your comment. At the end of each video I always upload the complete recipe, where a more extensive description of the recipe is given. To answer your question, when we work a dough that involves flour, we can always add a little more liquid in case it gets a little dry. In the specific case of the Maria Cookies, in the recipe I indicate the following: "If it is a little dry and breaks easily, add a little of the reserved milk". I hope I have helped you, and sorry for my long explanation.😅

Should the potatoes be boiled with the skin on?
Thank you for your comment. Normally they are cooked without the skin to give them more flavour. But if you want to cook them in their skins, that's fine.
Why so much oil?
Thank you for your comment. We are making small balls out of a liquid. The oil has to be abundant, in a tall container and very cold. The idea is that the "caviar" is formed meanwhile it precipitates to the bottom. If there is not enough oil, it will lose the cold temperature and the drops will not turn into little balls.

Thanks for your comment, actually I haven't invented anything, this is how chocolate was eaten for over two hundred years in Spain. Although its consumption was quite limited to the aristocracy. When consumption spread to the rest of Europe is when they started to use milk.

Hola Susana, gracias por tu indicacion, voy a intentar configurar los subtitulos en espanol para los proximos videos. De momento, te mando la receta en espanol: INGREDIENTES 1 pan de 'brioche' (un kilo) 800 g de Leche 200 g de Nata Piel de limón Piel de naranja 1 vaina de Vainilla natural Canela (una rama) 3 yemas de huevo 150 g de Azúcar PREPARACIÓN Cortar rebanadas de pan brioche de una medida de 3 cm de ancho, 10 cm de largo y 4 cm de alto. ________________________________________ Colocar las rebanadas de pan en una fuente grande y honda. ________________________________________ Poner a hervir la leche junto con la nata, las pieles de los cítricos, la vaina de vainilla y la canela. Dejar que hierva y bajar la temperatura a 80ºC durante 10 minutos. Tapar y dejar que infusione media hora. ________________________________________ En un bol, mezclar las yemas de huevo y el azúcar. Batir bien. ________________________________________ Agregar a las yemas la leche infusionada caliente, a unos 80ºC. ________________________________________ Remover bien y verter en caliente por encima de las torrijas, empapándolas bien. Dejar en remojo una media hora y sacar con cuidado del baño de leche para dejarlas enfriar. ________________________________________ Poner una sartén al fuego con una nuez de mantequilla por torrija e ir pasando una a una por las dos caras. Retirar. ________________________________________ Espolvorear con azúcar cada torrija y caramelizar con ayuda de un soplete. Servir acompañadas de un helado de vainilla.

Salam hangat BISKUIT MARIA BUATAN SENDIRI Bahan-bahan (Untuk 36 unit) 374 gram tepung terigu 100g mentega 1 butir telur kocok 6g baking powder 150g gula merah 26 ml susu 1 sendok teh ekstrak vanili Persiapan. Masukkan telur, gula, vanili dan setengah bagian susu ke dalam mangkuk, sisakan sisanya, dan kocok kuat-kuat selama lima menit. Ayak tepung dengan baking powder di atas campuran ini, tambahkan mentega cair. Kerjakan adonan dengan spatula sampai semua tepung tercampur, keluarkan dan uleni di atas meja dapur selama empat atau lima menit. Jika agak kering dan mudah patah, tambahkan sedikit susu yang telah disediakan. Giling dengan penggilas adonan dengan ketebalan setengah sentimeter, potong dengan pemotong kue sesuai ukuran yang diinginkan dan tandai dengan huruf M untuk Maria atau huruf lainnya. Tusuk seluruh permukaan dengan garpu agar adonan tidak mengembang dan panggang dengan suhu 180 ºC selama 10 menit dan biarkan dingin. Simpan dalam kotak kedap udara.
