Can one make vital wheat gluten at home for seitan? It’s hard and expensive to find it here
What about date syrup and date sugar? Do they also just have empty calories? Or they do have fibre and nutrients?
Hey Khushi...both of those don't have fibre but they do have a little more nutrients than regular sugar. The best would be homemade date paste, that has the fiber and nutrients intact

I don't think there are any brands in India that sell pure monkfruit. You can try getting it from Amazon USA, Now Foods is a good brand for it

Very well explained,Aashti I eat sugar with awareness...1/2 to 1 sweet/dessert in a day...which I eat as the last course of the meal,take a little walk... and I'm good to go I use one drop of artificial sweetener in my tea,once a day...is that ok? and sometimes I add little raw sugar instead I didn't like the taste of stevia at all I tri

Bottlegourd Brownies: Dry ingredients: * 135 g oat flour * 130 g jaggery * 50 g cocoa powder unsweetened * 1 tsp baking powder * 1/3 tsp salt * 1 tsp instant coffee powder * 80 g dark chocolate chips (I’ve used callebaut) Wet ingredients: * 220 g bottle gourd chopped * 90 g nut butter (almond, cashew, can also use peanut butter) * 60 ml plant-based milk * 1 tsp vanilla extract Flax Gel: * 1 tbsp flax seed powder with 3 tbsp water INSTRUCTIONS 1. Use a kitchen scale for this recipe and measure all the ingredients. Preheat the oven to 160c for 10 mins. 2. Peel and chop the bottle gourd into pieces and then add to a blender with the rest of the wet ingredients. Blend into a thick paste. 3. In the meantime make a quick flax gel by mixing the flax seed powder with water. Let it sit for 10 mins it will become a thick gel like substance 4. Sift the dry ingredients really well and make sure there are no lumps. 5. In a large bowl add the bottle gourd paste, and the flax gel mixture. 6. Slowly add in the dry ingredients and mix. If you see any lumps in the batter add the batter to a blender and give it a quick mix until the batter is nice and smooth. 7. Add some chocolate chips and bake at 160 C for 20-22 mins. Don’t overbake. Each oven is different so make sure to watch it. Insert a toothpick to check if it’s done. 8. Let the brownies cool completely before cutting. 9. Store in an airtight container in the fridge.
After realizing the importance of gut health, I stopped eating from restaurants. When I travel I eat my homemade sandwich or else turn the day into a fasting day. So eating veggies and fruits are key to good gut health.

Banana Flower cutlets The high protein cutlets are the perfect weeknight meal. You can also meal prep them and store in the freezer. They were surprisingly meaty too which was so surprising ! Make sure to try these cutlets, cleaning them requires some patience but it’s totally worth it. Ingredients: * 2 tsp cold pressed oil * 1 tsp cumin seeds * 1 onion finely chopped * 1 green chilli finely chopped * 1.5 tsp ginger garlic paste * Boiled banana flowers from 1 medium size banana flower * 1 block tofu grated * 1/2 tsp turmeric powder * 1 tsp red chilli powder * 1 tsp coriander powder * 1 tsp cumin powder * 1/2 tsp garam masala powder * Salt * 1 boiled potato (this is optional, you can also add in breadcrumbs to help with binding instead of the potato) * 1/4 cup fresh chopped coriander leaves Directions to clean banana flowers: 1. Clean the banana flowers by peeling the pink petals and removing all the florets from inside. 2. Now take each floret and remove 2 parts from it, the long thin stem and the translucent paper like cover. Both these are bitter so make sure to remove them 3. Once youre done peeling the banana flower, you will get to a thick stem which is the banana heart. This part is edible and can be used for the dish. 4. Once all the florets are cleaned, chop it into small pieces. Chop banana heart into pieces too. 5. Wash this really well until clean. 6. Now drain and add to a pot of boiling water with salt and turmeric. Boil for 5 mins until tender. Once boiled, drain and remove all the excess water. Now your banana flower is ready to be used for any dish. Instructions for cutlet: 1. In a pan heat some oil. Add in the cumin seeds and fry for a few mins. 2. Then add the onion and cook until translucent. Then add the ginger garlic paste and sauté till the raw smell goes away. 3. Add in the drained and boiled banana flower. Cook for a few mins. 4. Next add the grated tofu and sauté for a few mins. 5. Next add all the masalas, turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala. Mix well. 6. Next add the boiled potato. This helps with binding the cutlets. 7. Add salt to taste. Then add the chopped coriander leaves. Switch off the heat and mix sell. 8. Shape into cutlets, coat with breadcrumbs and fry on each side until golden brown. 9. Serve with some chutney and onions. Enjoy

Ingredients for Aquafaba: * Dry Chickpeas * Water Ingredients for chocolate mousse: * 1 bar dark chocolate 150g vegan chocolate chopped * 1/2 cup (120 mL) aquafaba INSTRUCTIONS FOR MAKING AQUAFABA 1. Soak dry chickpeas overnight 2. Drain and then add to a pressure cooker with double the amount of water. Don’t add salt 3. Pressure cook the chickpeas until done. 4. Drain the chickpeas and save the leftover liquid. 5. Measure this liquid- Add this liquid to a pan and boil until the liquid has reduced to half its volume. So if you get 2 cups from the pressure cooker, boil it until it becomes 1 cup. This is the most crucial step in making sure you have potent aquafaba. DO NOT SKIP THIS STEP 6. This aquafaba can be stored in icecube trays and used whenever you need to bake a cake, brownie etc. It’s a great egg replacer. Chocolate Mousse Recipe 1. Measure 1/2 cup (120 ml of the aquafaba) 2. Add it to a bowl and use a hand mixer with double beater attachments to whisk until it reaches stiff peaks. Be patient with this step it takes about 10-12 minutes. The mixture will look like whipped egg whites and form stiff peaks. You can test it by putting the bowl over your head to see if anything falls :) Just kidding 3. Melt some dark chocolate . Let it cool for a few mins. 4. Slowly add it to the Aquafaba micture hop a bar of dark chocolate and heat it in the microwave in 30 sec intervals until it melts. Let the chocolate cool for a few mins at room temperature as it will be really hot at this point and the aquafaba could split. 5. Slowly add the slightly cooled chocolate to the aquafaba mixture. Do this 2-3 steps. Don’t add in the entire chocolate at one time. Mix until it’s uniformly incorporated. 6. Spoon the mousse into serving glasses and chill for at least an hour. 7. Serve with chocolate shavings and some raspberries or pomegranate.Enjoy! Tip: Always save your chickpea water every time you’re making chole masala or any chana recipe. I have lots of aquafaba saved in my freezer and use it for baking cakes, cookies etc.

Moringa Podi Ingredients: * Cold pressed oil- 2 tbsp * Chana dal - 4 tbsp * Urad dal - 4 tbsp * Coriander seeds - 1 tbsp * Black pepper- 1/2 tbsp * Cumin seeds- 1 tbsp * Sesame Seeds- 4 tbsp * 3 cups highly packed moringa leaves * garlic pods- 8-10 * Kashmiri red chilli 8-10 * Tamarind - 1/2 inch * Salt to taste 1. Clean and wash the moringa leaves. Make sure to remove the thick stems. Dry thoroughly. You can also sun dry it for 2 days before you make the podi 2. In a large pan dry roast the moringa leaves on low heat until it turns crispy. You can also sun dry it for 2-3 days to dry it naturally. 3. In a pan dry roast the chana dal, urad dal, coriander seeds, black pepper, cumin seeds and sesame seeds until they turn fragrant and the dals are golden brown. Remove from heat and let it cool 4. IN the same pan add some oil and fry the garlic and chillies for a few mins until the garlic turns brown. Remove from hea. 5. Add the seeds, dals, garlic, chilli into a blender along with tamarind and salt. Blend to a fine powder. Remove into a plate, 6. Now add the moringa leaves to the blender and blend until you get a fine powder. 7. Mix everything and let it cool. 8. Store in an airtight container for upto 1-2 months. Podi is best made fresh so I wouldn’t recommend storing longer than that.

@@adhiliqbal500 no u don’t! There are millions of vegetarians on this planet who have survived for decades - some of the strongest athletes in the world like Novak, Serena etc are thriving on a plant based diet.
@@wellnesswithaashti Novak switched to vegetarianism due to allergies he had later in life, Serena is not even fully vegetarian I don't recommend putting your children in vegan diets

Gluten Free Crackers Ingredients: * 1 cup mixed seeds ( I am using flax, sunflower, pumpkin and sesame ) * 2/3 cup chickpea flour (besan) sifted * 2 tbsp nutritional yeast (optional but this gives it a cheesy flavour) * 1 tsp dried herbs (I’ve used oregano) * 1/2 tsp chilli flakes (optional) * 1/2 tsp salt * 2 tbsp cold pressed neutral oil (I’ve used sunflower oil)1 tsp oregano * 1/3 cup warm water Instructions: 1. Preheat oven 160 C fan-forced) 2. Place all the dry ingredients into a bowl 3. Add the oil and water and stir well until all thoroughly combined. It will be like a thick, sticky mixture. Allow to rest for 5 minutes. 4. Pour the mixture on some baking paper. (Make sure to use good quality baking paper/parchment paper or it will stick) 5. Cover with a second piece of baking paper 6. Using a rolling spread the mixture to be approximately 0.5cm 7. Remove the top layer of baking paper. 8. Cook in the oven for 20 to 25 minutes. 9. Allow to cool down and break apart with your hand and enjoy Spinach Hummus Ingredients : * 1 cup chickpeas(Soaked & Boiled) * 1 cup spinach chopped * 3 tbsp tahini * 3 garlic cloves * 1 tbsp lime juice * Salt to taste * 2-3 tbsp water used for boiling chickpeas * 2-3 ice cubes. Process : * To a blender/ food processor, add in the spinach leaves along with the garlic, tahini & lime juice - blend until smooth * Then add in chickpea, along with chickpea boiling water, ice cubes, salt & pepper to taste & a generous drizzle of olive oil - blend until a smooth hummus is formed * Serve, Garnish with some smoked paprika, olive oil & coriander leaves.
