Before my first cut how do I store the bag if it’s not ready for the first cut? On my kitchen counter?

I heard about you from two different friends (who don't know each other) who visited your table at the Home Show. My husband and I have been mycophiles for a LONG time, and would love to switch our source for in home grow kits to Sun Dreams Farm! We do pretty well foraging when the local weather is cooperative for the mycelium colonies out there (nope, not revealing our choice spots, ha ha) but grow kits are excellent partners in mushroom culinary dreams. Hi, I am growing mushroom with a kit and all started well with a beautiful white snow mycellium on the substract, but now the mycellium start to become grey!! I am not an expert by any mean and I would like to know if it's normal or if I contaminated my kit?! Could you let me know what do you think about the mycellium color changing please?!?
