The first minute of this video tells me you missed out on the Dark Age of Sonic and probably was born sometime in the 2000s. The reason for that is that it was known that the problem with Sonic didn't used to be serving chocolate cake, it was that he quickly went on to make other dishes and never bothered to improve on the cake recipe or any of the new ones. Kirby severed only chocolate and strawberry shortcake for decades but was great at it until they were ready to add a new recipe (Forgotten Lands). Current Sonics exhausting asset recycling and low budget development didn't start until Morio Kishimoto's success with Sonic Colors and the failure of Sonic Generations. After that Seems Sega was dedicated to keeping Sonic development low budget.

I think both the Kirby and Sonic examples are messy, though I see your reasoning. With Kirby, I still think that every time Whispy or Kracko are used again, it's a sign of the games themselves refusing to change or improve more, with games like Planet Robobot essentially being "Triple Deluxe, but more" and all. From what I've seen, Forgotten Land does make larger changes, but before that, many of the games just aren't interesting to replay and none of them tried to solve that, so the Whispy being a fully new fight doesn't really make up for it and those games also just outright reuse old fights at times as well (Robobot's Galacta Knight for example is just RTDL's fight again but with one new attack). With Sonic, many of the games had large changes in the past and while some did still have a Green Hill-esque stage at the start, there were still games with their own identity and most attempted to improve on things. Mania on the other hand lacked an overall identity and stages like Chemical Plant show an issue throughout Mania itself, where the reused content and the new stage design doesn't really work with eachother, and the amount of old stages coupled with how varied they are also hurts the game's pacing quite a bit, as even the new stages have their issues (like Mirage Saloon 1 being Sky Chase for whatever reason). I think another reason why Sonic fans are more picky is that Sonic fans in general tend to favor one approach or the other heavily while being dismissive towards the ones they dislike, while Kirby fans tend to just enjoy the games regardless if they're flawed or if they're completely different from what they're used to. Games like Kirby 64 have almost nothing in common with Super Star (Ultra) gameplay-wise, but most Kirby fans just enjoy both. Cool video overall though.

I think Sonic needs what Mario did in Wonder, just completely redo the animations, sound effects and controls from Scratch. Cuz part of why Sonic feels so stiff and dated imo is also that they reuse the same model, animations and control basics for Sonic and slap different additions and changes on top instead of making a smoother, newer version that was actually made for the game feel in mind
