How to Buy Fresh Fish | a Fishmonger's Guide
How long can salmon last in the freezer if I catch it and freeze it according to this method?
Hi good question. To extend freezer shelf life you want to push as much air out as possible to prevent oxidation and avoid any excess water to prevent freezer burn. If you do it really well, the fish will be fine for about a year. If you want to one better than this you'd vacuum-seal it and get 2 years out of it. The OSU Seafood Lab in Astoria is currently conducting freezing shelf-life tests (-18C, vacuum-sealed) and they said that even at the 2-year mark consumers can't really tell and don't rate it any lower in taste/texture etc. With this low-tech ziplock method, you'll get less time, but it absolutely works too.
Just cooked some lingcod like this for the first time and it turned out so delicious. The flesh was tender and it had such a good flavour. It truly allowed for the flavour of the fish to be first and foremost. Thanks for all the tips chef 🙌🏼
I love Local Tide! I go next door to Aslan Brewery, order from their menu, and wash it down with excellent beer😄😄
Genesis 1 20 Then God said, “Let the water be filled with many living things, and let there be birds to fly in the air over the earth.” 21 So God created the large sea animals.[a] He created all the many living things in the sea and every kind of bird that flies in the air. And God saw that this was good.
I stay away from sweets. I am prediabetic last time my glucose was drawn. So vegetarian diets are good too if you put in some seafood.
Good we eat fish and shrimp and sardines in olive oil
Hi mam i done my graduation i am from india can ii get a job in ur area
Who knew .. mayo and buttter .& seasoning Thx u
The fisheries collapsed up and down the coast. I went to Vancouver Island a few years ago. The limits were very strict. Like one rockfish per day. Good to hear that with careful management, the fish can make a comeback.
Milton is wise beyond his years. I only hope people heed his advice more in years future than they do now.
Thanks chefji
make sure to lift the lid 300 times
Overcook fish? Straight to jail.
Chappy here Sean. In town next week.
To me, skin adds flavor even on catfish.
Never a cook would work in my kitchen with such beard over the food. Never.
Yakitori chef is crying... burned it so bad with the grates...
Thanks
Thank you,good info,and short.👍
He makes it look easy enough.
Why would he need to ikejime a dead fish?
poor little skate has no meat on it☹
Skate is excellent eating we catch them here in Puget Sound often , they are much bigger than in the video which means more meat.
That right there, ladies and gentlemen is what my home town looks like….
Go to Canada, have plentiful of salmon
Yes, indeed, from southeast Louisiana .
Δεν ξερεις τι σου γινεται ρε κακομοιρη.
Sand dab sushi? As many as I catch, I’ll definitely try it.
Such vital information. I wish more people knew about this.
Great clip!
Simply the best 😊
Great video !!!!
I wish you had a dock I can pull my boat up to. I pass you every weekend and it would be easier for me to pull up to your dock. Love the store and every chance I get we are in. Thanks Tommy. I love having the piece of mind I am giving my family the best fish out there and it is fresh.
....Tunaville is worth making a trip for, right. Although, imagine, if they could do a "click and collect" type service where you pull up in your boat, and they'll just hand you your fish order, and onward you go.
@@positivelygroundfish That would be awesome. I love them! The fresh fish. Meals to go. I am getting hungry just thinking about it! I cannot think of 1 thing in this store I have not liked!
Not burnt.
I always wondered what a Fishery was. Thank you!
Very good very good’
Can normal sea salt be used?
Restarant is literally a house
Nice video Hans. Because we are starting our rockfish season this week I just thought I would watch a tutorial to remind myself how to properly fillet, a rockfish, and there you were.! fucking rockstar, buddy
Kinda ironic how he’s wearing a Patagonia jacket when they were a major supporter of the Mlpas which killed access to recreational fisherman
😒 "promosm"
Bro thank you, bout to buy like 10 fish and get them fileted
I have a question. I bought salmon and cod fish for my maltese puppy ( I dont eat any kind of meat, i am a vegetarian ). I cut it and threw it in the fridge in an airtight plastic bag. Shall I freeze the fish? This is my first time so I am not sure, dont want to give any disease to Simba.
Is it really better tho?
It's the difference to a bad sushi and the best, this is best kept secret. ❤
Do they still do this?
Bycatch declines are not driven by increased usage. Bycatch reductions have been driven by a reduction in abundance of fish.
I used to travel to Cali on business and I remember how much I enjoyed dining on sand dabs! Also abalone!
Fish is one of the easiest thing to cook
I liked when he said grilling is not about the pretty grill marks but to impart flavor, and he's absolutely right about that, thank you!
Great info! Inspired to eat more fish. Thanks!
Great to hear!
