When you make a mistake during talking, you have to repeat that sentence or word. If you clap or make any kind of click sound after you make a mistake, you can easily identify where you made the errors. Because where there is a tall spike, you know there is some error in that part. During editing, you do not need to listen to the whole audio for clean up purpose and it would result in faster clean up
How can I use Adobe Audition in OBS?
I dont think you can, those are different software

Why is this recording meter only working on 1 channel instead of 2 channels like it should be?
It depends on the channel mapping. Audacity has not settings for channel mapping unlike Adobe Audition. If you are using something like Scarlett 2i2 and recording in stereo, the left channel and right channel will be mapped to 2 separate input on the interface. You have to change it through the driver software or if your OS has some settings on it.

From Preference, go to Recording and check Record on a new track checkbox
is the sissors CUT and CLIP BOARDS PASTE not used anymore ? im using 3.1 because sissors and paste are gone
You have to enable it from View --> Toolbars --> Cut/Copy/Paste toolbar

what if the mic connected to your computer shows up in audacity but when i go to record, nothing is recorded?
Make sure the gain or recording level is set to 100%. Try with other microphone or built in microphone. You have to trial and error to find the issue is microphone or anything else.
Am I able to isolate the vocals and amplify just them?
Not Easily! There is an AI plugin named Open Vino that works in Windows and Linux. I am using a mac, so don't know about how well it works. There is another way to splitting stereo tracks to mono and then revert one mono track, but that doesn't bring that much good result.
