There's not much to understand. Creed is just weird. It's a weird out of place request, that's pretty much the joke.
Liam Mitchell a quarrey is like big well.
It's a kid's activity, and he's talking like a kid, instead of an adult. If there's a quarry, a ravine, a cliff, a well, a bridge... kids gotta get stones, sticks, tin cans, whatever and stupidly chuck them down. It's fun. Like Mythbusters blowing stuff up real good.
