very good place

it is better to fly under 30km/h wind. but to someone it flies even with stronger wind. Above 40 / 50 km/h it becomes impossible because the wind would be faster than the paraglider and therefore you would go backwards.

Tbh I think he's just resting his hands for more comfort, not actually holding on to the risers... it all seemed to be pretty smooth

Hey mate, nice to hear that! Are you still around? Cheers for the comment, in fact it does look like I brake a lot but currently brake lines are very long and the angle of attack results to be way less than it seems. I've done the SIV in Nepal when I first bought the glider and tried to push some manoeuvres like helico; to stall it you really need brakes under the harness and the deep stall is almost at the hips...
