Cranberry Clafouti - Series 2, Episode 6
** EDIT ** Preheat oven to 400°F (204°C). I neglected to mention oven temp in the video!
Clafouti is an easy, quick & rustic baked French dessert, consisting of fruit arranged in a baking dish and covered with a flan-like batter. This version uses cranberries with a little extra sugar to offset the fruit's tartness.
Not only is this dish easy to make, but it only requires a medium mixing bowl and a baking dish, making clean up easy!
Once you learn the basic technique, you can get creative year-round with everything from different stone fruits to all types of berries, or even mix it up!

Ginger Sweet Potatoes - Series 2, Episode 5
Просмотров 95День назад
Sweet potatoes are a popular Thanksgiving dish, but many versions are extremely sweet and more like a dessert. This version takes the sweet level way down by reducing the typical amount of sugar in the filling and using ginger three ways to provide balance. You can customize this recipe by upping the ginger, eliminating the small amount of sugar in the filling, and/or reducing the amount of bro...
Stuffed Butternut Squash - Series 2, Episode 4
Просмотров 3914 дней назад
Too often vegan or vegetarian guests at Thanksgiving are relegated to salad and a roll, no butter. Even veggie sides are often loaded with butter, cream, or some type of cream soup. Finally, a vegan entree substantial and special enough to serve as a main course adjacent to the turkey! No "tofurkey" or other meat substitutes pretending to be meat here. Instead, a flavorful combination of vegeta...
Kale & Persimmon Salad - Series 2, Episode 3
Просмотров 13121 день назад
This perfect Fall salad is packed with nutrient-rich ingredients, is a delicious combination of the seasonal Fall flavors of kale, persimmon and walnut, and presents a beautiful contrast of bright orange persimmon against deep green kale. But this salad's outstanding feature is that it is best dressed 2-4 hours ahead of serving - an ideal stress-saver for meals requiring multiple dishes and a l...
Roasted Pork Tenderloin - Series 2, Episode 2
Просмотров 60Месяц назад
The full title of this dish is Roasted Pork Tenderloin with Orange-Thyme Pan Sauce and Apricot Chutney! The chutney can be made 3-4 days ahead, making this an easy weeknight dish - but it's also special enough to serve to guests. I think Pork Tenderloin is an underutilized cut of meat - perhaps because this lean cut is very easy to overcook to a dry, flavorless result. In this video I share tip...
Roasted Maple Herb Nuts - Series 2, Episode 1
Просмотров 94Месяц назад
I've been making these delicious roasted maple herb nuts for many years - the sweetness of the maple syrup is offset with the heat of cayenne and the pungency of fresh fall herbs like sage and rosemary. They make great snacks while watching the game, perfect nibbles at a cocktail party or a tasty addition to salads. I often give them as hostess gifts around the holidays. Everyone loves these an...
Patatas Bravas - Series 1, Episode 8
Просмотров 415Месяц назад
If you are a fan of fried potatoes (and who isn't!), you must try Patatas Bravas! Translated to "Brave Potatoes" in English, the "Brave" part of the name refers to the spicy and smoky tomato based sauce served with this dish (otherwise they are just fried potatoes). I have rated the skill level of this dish "Intermediate", because it involves peeling, cutting, par-boiling, draining, stirring & ...
Garlicky Fried Mushrooms - Series 1, Episode 7

These garlicky mushrooms are another tapas classic, with preparation very similar to the Sizzling Shrimp with Garlic in Episode 2 (see below for link). This dish is easily made vegan by not using the optional bacon or ham. These mushrooms also make a delicious side dish to any roasted meats. Tortilla Espanola - Series 1, Episode 6

This is the classic tapa found all over Spain. Anyone familiar with Mexican food but not Spanish may instantly think of a corn or flour tortilla, but this is a different tortilla entirely and is actually a potato omelet! It is served room temperature, so is perfect to make ahead. Such a delicious application of just 4 basic ingredients - potatoes, onions, eggs, and olive oil. Please Subscribe s...
Grilled Moorish Style Pork Kabobs - Series 1, Episode 5
Просмотров 372 месяца назад
This dish reflects the Moorish influence in Spain, having ruled the Iberian Peninsula for 800 years. North African spices of cumin, coriander, and turmeric are bloomed in oil then used in an overnight marinade. The Spanish adapted this dish using locally popular pork, something that the Muslim Moors would not have eaten. Boneless chicken thighs may be substituted. The pork pieces are then skewe...
Red Wine & Mock Sangrias - Series 1, Episode 4
Просмотров 502 месяца назад
Sangria is a perfect beverage to serve with Spanish tapas and help beat the heat of summer! We include a classic red wine version, as well as a "mock" non-alcohol version using a base of juice. These are very flexible recipes. The red wine version uses just oranges and lemons for a less-sweet sangria, but you can use whatever fruits you like. The mock sangria calls for more types of fruit, but ...
