    When you hot pack ,how hot was your water in the pressure canner? I’ve only cold packed my all American, I have broth that I cooked yesterday and tomorrow I am canning them but I’m nervous about heat cracking jars and keeping the balance between canner water,broth temp and jar temp……

      Top be honest, I do not take my temperature so I really don't know how hot the water is. I make sure to heat my jars and my broth back up so when it goes into the water is is already warm/hot. I have never had a jar crack on me from heat when I make sure my jars and broth are hot.

      My favorite all purpose gluten free flour is Cup 4 Cup. I make my own homemade blend that is the most like Cup 4 Cup, I share the recipe in my digital cookbook on the blog. Cup 4 Cup and my homemade blend both have dry milk powder in it, so they are not dairy free.

      Sorghum flour is a gluten free grain flour. I do not use it in the bread, it is a stronger grain to feed the starter.

    Can you also make apple cider vinegar and pectin?? I’m getting ready to buy a bunch of apples and make apple sauce, pie filling and thinking about vinegar and pectin? I think the pectin thickens jelly??

      Yes you can use your scraps to make apple cider vinegar and pectin! I have not tried pectin so I can't give much guidance there, but it is possible. I bet you can find many recipes on how to do it!

    Invest in a food mill! Throw the apples into the seam juicer. Put the residue through a food mill, that will separate the pulp from the seeds and peels. Works great!

    we have actually completely switched from costco peanut butter to azure brand- no salt and zero sugar- we buy both the chunky and smooth in the 5 lb tubs - it is really good- I mix up with my immersion blender- and store in the fridge- stays mixed and never becomes hard as a rock-

      Yes! Although the less I eat refined sugar, the sweeter everything else tastes so I often cut back the amount of coconut sugar I add to recipes by 1/4-1/2.

      Yes you absolutely can! Your soup won't be quite as thick (since the clear jel is a thickening agent) but it will work wonderful to do it that way.

Storebought GF- UGH! Bought GF bread books, tried many other RUclips channel recipes. Nada! Until your channel. First tried your GF roll recipe (many times) always so good! And yesterday your GF round loaf bread in a Dutch oven. What a Godsend your channel is to me, thank you! Your videos are precious with your girls helping and them riding horses in the intro.       I have an electric oven. I am unsure if it is fan forced. I have used this recipe with multiple different ovens, and have had friends do the same. I would imagine that this recipe will work regardless of the oven!

      The inserted thermometer will come out slightly doughy. Make sure to not cut your loaf until it is completely cool so it doesn't turn gummy as well.

    What does the vinegar do?

      Vinegar is going to improve your texture and structure of your gluten free bread. It reacts with the leavening to create carbon dioxide which helps the bread to be light and increase the rise. It also helps to break down the starches which will improve gluten free bread, this will ensure your dough is not super dense and heavy. While both vinegars are fine, apple cider vinegar has proven to be superior when it comes to gluten free baking. Hope this helps!

    Do you have any suggestions for high altitude gf bread making? We are at 5,370 ft. My bread is failing miserably. My dough is either runny or it is as hard as a rock. Last time I baked my bread for almost 2 1/2 hours and the inner temp never got to temp. I am new to GF baking. Thanks for any advice.

      My best advice would be to start with way less water. It is always easier to add more liquid then it is flour when gluten free bread baking. That way your ratio of the different flours will stay accurate and you can add in splashes of water at a time to get the right consistency. Even where I am at, I always start with about 1/4 cup less liquid in any recipe I am trying to form a dough to shape. In your case, I would start with even less than that!

      Yes, you absolutely can add in things! Just before shaping and putting it in the oiled bowl, mix in whatever you choose. Then shape it and put it in the oiled bowl to rise.

    I have made 2 loaves: both are heavy and dense......is that how it is supposed to be? Secondly, the bread is hard after just one day. What am I doing wrong?

      I would adjust the water ratio. Keep the flour measurements the same but add more or less water to get a slightly sticky texture. I have to wet my hands to handle the bread. This usually helps with the heaviness. The bread is always best on the first day. We like to use it up after the first day in grilled cheese, french toast, or just toast with jam. If you want to eat it with just butter, always eat it the first day!

    I have watched numerous podcasts and most say to pressure can for some products for 90 minutes if i do that when I finish it has boiled most of the water and some of the products what causes that.. also can you can soup

      Yes, almost everything is 75 or 90 minutes with the exception of broth and green beans. Are you talking about the water in the actual canner or in the jars that boils out? And yes you can can soup! It's delicious but make sure to use a canning approved recipe. I like to get my recipes from The Complete Guide to Pressure Canning cookbook!       Unfortunately it takes quite a bit of flour to feed it well and keep a good ferment. However, you don't just have to throw the discard away. It is great in pizza crust, pancakes, cookies etc! You just can't use it in bread.

    Excited to try! Is there a reason you don’t do an overnight ferment? It seems it’s not necessary when seeing your results. If so, this will help me from being so overwhelmed with all of the timing steps.

      Gluten free always seems to rise faster so there isn't a reason to overnight ferment!

    Hi. I have been making your sourdough bread for several years and was wondering if you have switched that recipe to use psyllium powder in this recipe. I would like if my bread did not turn out so dense and was wondering if switching to psyllium would make for less dense. Thanks

      The psyllium husk does help in this department some, however I have not been able to nail down a good recipe with psyllium husk yet. I have tried a bunch but it just doesn't have the same rise.
