Just another way to use up all that Zucchini… frozen works great too!

Recipe:
Chocolate Zucchini Loaf -
1 C flour
1/2 C cocoa
3/4 tsp Baking Soda
1/4 tsp Baking Powder
1/4 tsp Salt
3/4 C Organic Coconut flakes
Mix together dry ingredients
2 Large Eggs
1/4 C Melted Coconut Oil
1/3 C Greek Yogurt or Sour Cream
2/3 C Sugar
1 tsp Pure Vanilla
Mix together and add to dry ingredients stirring until combined. Fold in 1 1/2 cups grated zucchini (no need to remove excess water)
Pour into prepared loaf pan. Bake at 350 F for 50-55 minutes. Cover loosely with foil for last 30 minutes
Cool on rack
