Brussel Sprouts with Preserved Lemons
Brussel Sprouts have never been my favorite veggie, so I'm always looking for new ways to cook them.
I also wanted to try my preserved lemons in something other than the traditional recipes like Chicken Tagine.
NOTE: You can certainly make this with fresh lemons, but preserved lemons add a very distinct taste.
You can buy preserved lemons online if you want to skip making your own.
If you do make your own, I recommend at least 6 weeks in the fermentation process. More is better!

This little dog is determined to get under the sink so she can stick her nose up to where the pipes come into the house. She spends hours outside going from vent to vent, and after finding the 'new' access spot it's been a real battle keeping her out.

As the kids grow older and have their own things going on, Tara sees less and less of them. She makes it clear she's missed the one she almost never sees. (Julian got to sleep in a little!)

First use of this product. I had to apply quickly because it's been so wet here in Oregon and my window was small. Washed it, applied while still slightly wet...'easy on & easy off'..the results speak for themselves! I'M SOLD! Thanks Chemical Guys!

Tara loves to play ball. She'll toss it in the air, push it off the couch and catch it just before it rolls off, and even keeps it in her food bowl while eating. I get hours of enjoyment watching her.

Damn! That was a good looking car. I sold it in 2020 simply because the maintenance costs were starting to exceed my budget. Today in 2022, with _premium_ fuel _(required for this car)_ at almost six dollars per gallon? I almost feel sorry for the guy who bought her!

Russell F my only issue the smoke dies out . I started to use chunks and it seems to be a bit better so I'm guessing adding new soaked chunks every 45 minutes could be the difference?
If you mean the wood burns too quickly because it's dry, then yes. Using chunks or even soaking your wood in water for a couple hours will help. Pretty easy fix. Personally, I like quick smokes because the smoke is so heavy (but it does cost more in burned wood) If you mean that the meat dries out, that's a bit more tricky. Most smokers have a water pan, and filling with HOT water when you slide your meat in will help. I've actually "improved" my method since I made this vid. I only use the smoker for the smoking process. After several pans of chips, I NOW move my meat (still on racks) into the oven. I do this because it's easier to control the temp. If your meat is drying out, you can do two things after the smoking process. ( be it in the oven or in the smoker) Put it into a tin foil covered container early. You can add a bit of apple juice or water in the bottom of the container to add moisture, but generally it will be moist without it. There's really little ways to screw this recipe up. Too much smoke will leave it somewhat bitter and letting the meat dry out will...Well, dry it out!..LOL Cheers!
Thanks for the help! The wood dries out not the meat thank God lol the meat is moist. I've done mackerel 2 briskets and a turkey and flavor has been great. I would like to get the wood smoke better so I can build that bark and get a nice presentation. I'm obsessed with smoking now lol

It's important to note that I didn't use a "mop" to keep it moist. This, because the yellow mustard seals the meat. Don't worry....No mustard taste in the end. I've heard so much about how hard it is to make a good beef brisket, but I must have done everything right, because this turned out GREAT!!!!
