Upcycled Fermented Vegetables with Chilies

In this video, we will go through our process of taking some left over veggies parts (stems, leaves, core) and turning them into a delicious fermented vegetable condiment. We based this off of our Golden State Pickle Works Cauliflowers with Chilies. www.collectivecultures.com / www.goldenstatepickleworks.com
What did I do wrong? It melted out the side and only the center was kind crispy?
It usually takes a minute after it cools down to really crisp up. Also, we like to use a little parmesean on the top and bottom, which seems to crisp better than other cheeses. Hope this helps!

What can you use instead of chickpea flour?
Anything that soaks well - AP flour, rice, tapioca or potato starch - I wouldn’t use something fatty like almond flour but almost anything else would do!
