Broccoli Cheddar Cornbread | April Quick Cooking
Broccoli Cheddar Cornbread
4 eggs
2 sticks of butter
2 boxes of Jiffy cornbread mix
24 oz container of cottage cheese
1 large onion chopped
12 oz bag of frozen broccoli
2 cups shredded cheddar cheese
Preheat oven to 375°. Put the 2 sticks of butter in a 9x13 casserole pan and put in oven to melt. Mix remaining ingredients except cheddar cheese. Pour over melted butter in pan. Spread evenly. Make sure the butter that rises to the top is spread evenly over the cornbread mixture. Sprinkle with cheddar cheese. Bake for 45-55 minutes or until middle is done. Enjoy!

Would they set up this well using chopped pecans instead of peanuts? If so they would really be good.😊
I’m not real sure. If you used the same amount of nuts, I’m not sure why they wouldn’t. The only thing different I have tried is I added some dried fruit to it one time and some cashews another time. Those were good but not as good as the original. 😊

Good job! Those plates of food are gorgeous and I’ll bet taste that way! Those peas over rice with cornbread on the side would make a meal. I’ve never added basil to peas, but I love jalapeños so I usually add them. And if you don’t have bacon, sausage also works.

Yeah.. l have to cut my sodium way down. No bouillon for me. First time l've heard of barbeque sauce in the beans but l'll have try it. 👍💛 And l add some butter in the pan when l add the veggies. It helps de-glaze the pan. And butter always adds to the flavor😊 Looks great !!!
You can leave out the bouillon if you have to watch your sodium but I would maybe supplement with some additional seasonings.
