Absolutely! That's a good tip. Although it is difficult to get access to the sea water (unless harvested in-person or purchased from the source), I also find that using salt water helps to purge impurities.

Hello. The purpose of the water test eliminates the need to know a specific surface temperature in your pan before cooking. Moreover, each pan is varies and different foods require different cooking temperatures. I recommend giving the water test a try and see how much it well it works for you. Classic challah bread is definitely sturdy for french toast and holds up just as well if not better than brioche which is slightly denser and fluffier.
