In the books, GRRM never confirms that Daemon dies. Three bodies were found - 2 dragons and one dragon rider, all dead. Daemon's body was never found.

We actually don’t know what happens to daemon for sure. The book is written 100 years after the conflict. There are conspiracies Daemon actually survived the battle, and fled to Essos, seeking life of peace.
