Pecan-Crusted Seitan
This is a crowd pleaser! It can replace your standard meat product and no one would be disappointed.
Here's the recipe-
Marinade:
3/4 cup tomato paste
1/4 cup apple cider vinegar 1/4 cup dry red wine
1/2 cup of orange juice
1/4 cup amino acids
1/4 cup minced garlic or less to taste
1/4 cup chopped fresh parsley
2 tablespoons minced fresh Rosemary
8 to10 pieces plain Seitan about 1 lb
2 cups all-purpose flour
1/2 teaspoon fine sea salt 1/2 teaspoon freshly ground black pepper
1 cup ground pecans
2 tbsp finely chopped fresh Rosemary or one tablespoon dried rosemary
1/4 cup extra virgin olive oil

Lentils are so versatile, love them! Since I don't usually buy bread or breadcrumbs, I subbed in quick oats, and added ground flax instead of the chickpea flour. I also added some aromatics (garlic & onions) and a spoonful of steak sauce for some kick, which ironically is vegan! The only problem was I used the link address above for the gravy and it said it was no longer available? Thanks for the inspiration, this will be a regular!
