Also playing this build atm. Granted, very casually and my 5th or 6th plus toon in this season. Shes been the easiest from start.. and will never be finished. This class used to stick out to me the most in every game, but I failed with it till D3 (Wiz) when I made myself learn it, after I mashed out the Whirlwind Barb ofc. To kill the Butcher much more easily, avoid positioning yourself in a large room without obstacles. The boss can easily catch up to you with a dash/cc that is almost impossible to dodge. It's best to constantly play with an obstacle, such as a pillar, wall, or entering/exiting rooms.
