Mussels Anyone ? Cook-a-longa Alan.Mussels in Tomato and Chilli Sauce

Join me at home for a quick video cooking Mussels in a Tomato and Chilli Sauce.
1 Kg of Mussels -debeard and clean
2 Tbsp of Olive Oil
1 Shallot Finely chopped
2 Cloves of Garlic finely chopped
2 Small Red Chilli (1 if you don't like too much heat)
1 tbsp tomato puree/paste
1/2 Lemon rind
1 tsp sugar
1/2 glass of dry wine wine or dry sherry
Freshly ground salt and pepper
Heat Oil in large pan medium heat add shallot, garlic and chilli fry until soften
stir in tomato paste heat for another minute add tomatoes,lemon rind and juice, sugar and wine
Bring to boil stirring regularly then reduce and cook for about 7/8 minutes
Add Mussels and cook...

Enjoyed the wee blog Alan. If it's of any consolation to you, the weather here on the North East coast of Ireland is cold and miserable. It rained for most of the summer here. Yes you are right, living along the coast does affect the internet and the streaming. With regards to the drinks at the Arona Gran, they are very reasonably priced and very well prepared, when compared to drinks served at other hotels. The drinks served at The Guayarmina Princess were a lot dearer and only half the size of the drinks at the Arona Gran. Also the quality of the drinks was not great either. The Arona Gran wins all around. So looking forward to seeing your videos of your trip away in October. I especially love the vlogs where you get talking to the staff at the hotel. And of course looking at the food.😋😄😁

Lovely vlog Alan, I was brought up in the West End, lived round the corner from the seemingly immortal Tennents Bar. So many memories. I love eating in Byres Rd, so many amazing places and artisan shops. So many places are part of DRG Group ,Topolobamba , Cafe Andaluz and my current favourite Chaakoo in Ruthven Lane. Old enough to remember seeing Chic Murray walking up Byres Rd on his way to record a programme at the BBC HQ across from the Botanic Gardens. Thanks for the memories Alan.
