Funny how some don't like mullet. Similar to people's reaction to fresh water "Drum"...they think it's a carp, but it's identical in it's light flavor and flaky texture to Sheepshead.

You’ll be more close to Florida mullet at 200 degrees 2 to 3 hours.

Did very good job but didn’t keep the gizzard, I grew up 4 generations cattle and seafood gators all we your to smoke jack crevalle mackerel kingfish and also made and sold smoked fish dip out of all of them, the gizzards are very good!

Everything you did was right except for the smoking time, they should smoke much longer. The way smoking mullet came about was to Preserve the meat without refrigerators therefore the salt brine,the moisture needs to be smoked out of the meat or they will spoil. I don't know anyone who used sugar in the brining process and the temperature needs to be a little higher. As long as you like it its fine with me also hushpuppies are fried not baked.
