Fizzy Goodness Kombucha: a (mostly) happily-ever-after story of microbial cooperation
Просмотров 886 месяцев назад
Once upon a time, kombucha was a weird home-brewed beverage only consumed by health-obsessed hippies. Today it is a mainstream alternative to soda. At the heart of this story is the perception of kombucha as healthy, and the relative simplicity of carrying out a kombucha fermentation - make some sweet tea, throw in the “SCOBY” and when it starts to smell vinegary, taste it to see if it’s done. ...

Will seaweed become the new steak? A new emerging protein source and medicinal food.

    I agree that """we""" have a protein 'problem' in the West and the world at large. Specifically, most people are choosing diets that they believe meet their protein requirements (or at least they consider healthy), but are at least double digit percentage point under what their bodies actually need. Soil degradation is being remediated by small-scale farmers and home steaders already. They've also managed to exponentially improve the efficiency of land use. And "too much carbon in the atmosphere" is an absurd claim made by religious zealots, but even still molten salt reactors have been a solution since the 60s. With enough energy, one can control more factors of nature, including carbon dioxide levels. So I must ask. Is the failure to diminish the cost of energy by several orders of magnitude since the 60s a signal that none of the powers that be believes climate change is a threat? Or are they trying to kill people on purpose?

    Will the springerle molds work with shortbread dough?

    • @sueq8337
      @sueq8337 Год назад

      They might. It depends on how much fat you have in the dough. Someone gave me a round, clay shortbread mold where you press the dough in and bake it in the mold, and then slice it afterwards. That worked really well.
