My FAVORITE Method for Cooking Tri tip! - Smoked Tri Tip Recipe
Smoked tri tip is a roast that cooks like a steak, doesn't take too long to smoke and just might become your favorite cut of beef!
Tri tip on a smoker and then seared, also known as reverse sear, is my favorite way to cook this meat! I prefer to hang in a drum smoker over coals and oak wood for the best flavor. Then a follow it up by cooking over high heat to get a nice sear with flavorful crust.
What’s your favorite doneness level for steak? Here are the temps (in Fahrenheit):
Rare: 120-130°
Medium Rare: 130-135°
Medium: 135-145°
Medium Well: 145-155°
Well Done: 155°-up

    I cook my tri tip for about 8 hours at 240* wrapped in foil then let it rest for 30 minutes and it falls apart like brisket

    I do it TEXAS STYLE. 1:3 ratio of salt and course pepper, nothing more. Cook it fat side up if I want juicy slices. Cook it fat side down for that good looking presentation with the dark red smoke rings on the meat. Cook it LOW and SLOW overnight, then wrap it in the morning and continue low and slow, then bump it up for those last three hours or so.

      Personally, I discard them. They have tendons and fibula in them. You could trim around those and use the little pieces excess meat for something like chicken fried rice.

    I've got a half pork belly from Costco in the freezer that I've been wanting to do something with. Others have told me that cooking pork belly without the usual "bacon brining" is a pretty bland piece of meat after it's cooked. After watching your video I may just have to try it. My latest video I just used kosher salt and pepper on my tri tip and the flavor was outstanding eating it by itself and even more amazing using it on a sandwich. I don't see why just salt and pepper on smoked pork belly wouldn't be just as flavorful right?

    I've done the lollipops also and you're right, the trimming of the bone is a little tedious but well worth it. I didn't put bacon on mine but next time I will.

    Did you let it rest at room temp first or did you immediately wrap it straight off the smoker? I hear different methods and one was letting it rest at room temperature to 180°, then placing it cooler for resting? Just curious

      I wrap after they come off while they rest. It’s helps make the ribs tender to the bite. You could even brush a little melted butter on top while it rests for more flavor.
