It's not meant to contain 95% of the data! 95% confidence interval means that if we were to take 100 different samples and compute a confidence interval for each sample, approximately 95 of those intervals would contain the true population parameter.

where did the 1.96 for the t test come from
The 1.96 is actually the Z-value (from the z-distribution, which is also the standard normal distribution). This Z-value cuts off the top 2.5% and bottom 2.5% of the data (hence the 5% alpha or 95% confidence). When the sample size is large enough, the t-statistic approaches z-distribution, which is why usually we consider 1.96 as the typical number to compare our t-statistics against. However, when sample size is small, we should be using the t-distribution, which Stata itself considers and calculate the p-values accordingly.

The error message sounds like it has some formatting issue. Perhaps you can check if your XML files are coming out properly (that is XML files should start with <?xml version="1.0" encoding="UTF-8"?> and all tags should be properly closed.). If the problem persists, I'd suggest updating your software or switching to a different command.
What about exporting multiple tables to the same excel spreadsheet? Ex, running frequency / descriptive statistics and chi2 on a dozen variables and need to show all of them in table format?
I am afraid I can't suggest an easy solution to this. You need to get a bit more creative, perhaps looping multiple tables together and then passing it inside one logout command or preferably switch to any other command that allows this level of complexity.

If you are referring to regression outputs, you can use outreg2 (I prefer this one) or estout. For summary tables use logout as shown in this video. Hope this helps!

Hello There! I am currently trying to create line plots in a panel data set for a number of countries. Kindly asking for help or references on how one can go about with that. An example would maybe to plot a chart for GDP growth rate and poverty in maybe 6 different Countries. Thank you.
Hi. You can either take a look at the "xtline" command. To do so, first declare your data as panel using "xtset" and then the syntax: xtset variablename or, you can also use the "by" option in the usual line plot command in case your number of countries are reasonably small enough to type them out.
