Submarines made it hard to travel in the Atlantic, so because of that Europe couldn't discover America... But still, it is possible through Siberia, Berengov, and Alayska to discover a new continent in this universe...

There is a ton of Orthodox stuff in Trench Crusade, those blind snipers and their equivalent of a comissar are in the video to name a few. They have an entire faction dedicated to Islam too, theirs are some of the best designs imo. It's all in the lore primer on their website
