    I have a bottle of a RUBY PORT wine that was purchased years ago. The port came from Brushy Creek Vineyards in Alvord, Texas USA. There were 2 bottles purchases and would only be opened on special occasions. Each bottle lasted years as it was only consumed a couple times a year. The port was opened then stored in a dark kitchen cabinet using the original cork. I just had several tiny glasses of the last remaining bottle.of port, and it was just as good if not better than when it was first purchased it. I was under the initial impression that this was "THE WAY" to keep and drink port. But according to multiple sites on port, it should have been ruined years ago. I guess I was a just lucky or this is some very special port.

      You can't get port from America, it's just fortified wine. It is only called port if it comes from the Douro Valley in Portugal.

    Excellent interview Odile is quite articulate for someone her age. I also love Bouchard wines and worked for a distributor that represented them in the USA.

    So far I'm really enjoying this series. While talking about Fermentation at 1:53 the presenter talks about reaching 7-8 degrees in the ...something scale. I can't tell what she says there. And RUclips captions list it as Bone Marrow Scale, but I'm guessing that's not right...

      Baumé - scale of measuring total dissolved compounds in grape juice, and therefore its approximate concentration of grape sugars

    As a long-term vegan who loves port, I have found the recommendations I've heard over the years confusing, and often contradictory, and have not had port since switching to this lifestyle. This video is extremely helpful in "clarifying" the processes of making port, so thank you for posting it!
