Hello! I'm a chef that has been cooking for 30 years (as of August 2023), and also happen to be Lebanese American. I used to own Lebaneser Scrooge in Portland, hence the name! Any video you watch on this channel will either be food related, or Lebanese related. (Or in many cases, both!)
My goal for this channel is to eventually record a series where I travel to Lebanon in search of any living relatives I might be able to find, so that I can show them how their family's food has evolved over the past 100 years here in the U.S. using "Americanized" methods and ingredients.
While I am there I would also like to record a second series, where I visit the 100+ ancient archeological sites in Lebanon, and discuss their history and the foods that would have been popular during those ancient times.
I hope that you will join me on my journey!

Very educational & informative (yes, they're different things), EXTREMELY entertaining & well done. There were some kinks, but like Tai said, by show 50, it ain't no thang. Tai emptied each & every plate that was served to him till the coosa, and he had given you fair warning that he was getting full. But he rebounded, because I heard him recleaning the bowl in the background after he had already finished the ice cream & set the bowl aside fer a spell. Watched in its entirety & very excited to see the next one. I know it was an inaugural show.... great job!

The only sumac I know of is poison sumac. You might want to explain the ingredients if they are unfamiliar to most people.

I discovered the spice sumac last year - tastes a lot like lemon, but more flowery and less acidic. It is a beautiful dark red color, and it's delicious on corn on the cob with butter.

Garlic, Sumac, Parsley, Lemon Zest, Salt, Pepper. You may have just inspired a video, my friend! Also the color depends on where you get the sumac. I like the stuff from Jordan because it's BRIGHT PINK!

Because I didn't know what that was until I googled it just now 😂 I have a show called Lunch with Lebaneser that premieres June 1st where I interview artists, musicians, comedians, actors, chefs, or anyone I just find interesting or inspiring all while cooking them a 10 course meal! This footage was from an episode where I interviewed a wood burning artist, Noah Nelson of Noah's Art. The theme of this one was "East Coast vs West Coast (Asia Edition)" so for the West Asian stuff I just did my regular Lebanese food, and for the East Asian stuff, I did one course each from Japan, China, Vietnam, and Korea. I'll have to buy some gochugaru on my next trip to the Asian market. Thanks!
@@LebaneserScrooge Happy to show you something new! When you go to look there are two types. There's the big flakes, typically used for kimchi, and a finer grind. Make sure you pay attention when you look at them!
@@lisetteblythe-author8531 yeah I saw that when I googled it. I'll probably get both! I served these ribs with kimchi but just bought it. I wanna learn to make my own! I feel like if I knew how to make it, I'd eat it every day! I've been cooking for 30 years, but have ZERO experience with Eastern Asian cuisine, so I've always found it a little intimidating. This last little series I've done on East Asia has taught me a lot!

Yeah I didn't include it in the video, but he replied, "I think you need to talk Cern about that." He thought I said, "How is this supposed to help cut ions" LOL! The full documentary was released saturday! Also, he'd never heard of a kitchen mandolin, so he didn't get the joke either way haha
